Fast & Easy Tomato Soup

You wouldn't think that these simple ingredients, you can make such a creamy and delicious tomato soup, but it can. This is as straight forward as we can tell you to make this easy and fast Tomato Soup.

- Yields: 4 servings
2 cup chicken or vegetable stock/broth
28 oz. Can concentrated crushed tomatoes
1 cup Heavy Whipping Cream
20 fresh basil leaves, cut finely for garnishing
Briggs True Texas Seasoning & rub
4 slices bread, 4" across, 1/4-inch thick-slice
2 cloves fresh garlic
Extra-virgin olive oil
1/2 lb of your choice of shredded cheese to compliment your soup
1Combine broth and tomatoes in a medium saucepan over moderate heat. When soup starts to bubble, stir in heavy cream and reduce heat to low. Season with Briggs True Texas Seasoning & Rub(to taste) and simmer gently 15 minutes, stirring occasionally. With an immersion blender, puree soup. Serve bowls of soup with basil and top it with your favorite.
Garnish / Toppings
1Toast bread slices in your toaster until golden brown. Rub the toasted bread with crushed garlic, it taste great, trust me. Arrange bread on baking sheet. Drizzle each slice with extra-virgin oil and top with a dash of Briggs True Texas Seasoning and a layer of shredded cheese (your choice - but Parmigiano Reggiano will take over the top). Place under hot broiler to melt cheese until bread is golden brown.
