Crispy Oven Fried Chicken

We love fried chicken but who doesn't. This Crispy Oven Fried Chicken is baked to taste juicy on the inside and crispy and crunchy on the outside. It's a quick and easy chicken recipe, that will take about 30 mins and it's healthier than a traditional fried chicken.

Ingredients

6 chicken drumsticks or thighs (organic if possible)

1 cup Greek yoghurt

3 tsp Briggs True Cowboy Cajun Seasoning

1 cup all-purpose white flour

2 tablespoons melted butter

Directions

For marinade

1In a large bowl add yoghurt and salt

2Mix well with a spoon

3Add drumsticks in bowl and coat with yoghurt mixture

4Cover bowl with cling film

5Marinate for 2-4 hours in the fridge

Baking Instructions

1Preheat oven to 350F

2Line a baking sheet with baking paper and place a cooling rack on top of it

3Spray the cooling rack with non-stick cooking spray

4In a separate large bowl add flour and Briggs True Cowboy Cajun Seasoning and mix well

5Remove drumstick from marinade. Pat slightly with tissue paper to remove excess marinade

6Place drumstick in bowl with flour and coat it thoroughly with flour mixture

7Place drumstick on oven rack

8Repeat process with all drumsticks

9Melt butter in microwave for 10 second intervals

10Drizzle melted butter over drumsticks

11Bake for 35 minutes until golden brown and thoroughly cooked

12If drumsticks brown a bit too much, carefully remove baking sheet from oven, cover drumsticks with aluminum foil and continue baking
