Classic Falafel

I know you're asking yourself "what the heck am I gonna do with all those chickpeas I bought?" no worries we have the solution. FALAFELS! Yes, falafels are super tasty and good for you too and you can spicy them up! You can also make the mixture up to 3 days in advance. Just refrigerate it in an airtight container until you're ready to use it.

1 can chickpeas, drained

6 cloves garlic, roughly chopped

1 shallot, roughly chopped

2 tbsp freshly chopped parsley

1 tsp ground coriander

1 tsp Briggs TRUE Cowboy Cajun Seasoning

1 tsp ground cumin

3 tbsp all-purpose flour

Vegetable oil, for frying the falafels 😉


1In a food processor fitted with a metal blade, combine chickpeas, garlic, shallot, parsley, cumin, coriander, and flour and season Briggs TRUE Cowboy Cajun Seasoning. Pulse until mixture is coarse, Make sure you don't over blend!

2With an ice cream scooper form mixture into falafel balls about 2" in diameter, squeezing to compact. Transfer to a baking sheet and chill in the refrigerator while oil heats.

3In a pot, heat 1” vegetable oil until a drop of water added to the oil sizzles and pops.

4Remove falafel balls from the fridge and fry falafels until golden, then transfer to a paper towel-lined plate and season immediately with salt or Briggs True Cowboy Cajun Seasoning.

5Serve falafels in a pita with lettuce, tomatoes, and cucumber and drizzle your favorite sauce.
