Ingredients

  • 1 can black beans — rinsed and drained
  • 1 cup frozen or canned (drained) corn kernels
  • 1 whole red bell pepper — diced
  • 1 large sweet onion — diced
  • 1 cup cilantro leaves — chopped
  • ¼ cup fresh lime juice
  • ¼ Cup (2 oz) BRIGGS True Texas Jalapeño Sauce
  • ¼ Cup (2 oz) BRIGGS True Texas Seasoning & Rub
  • 1 whole mango – (a Peach or Apple works too!) peeled and diced
  • Fat free corn tortillas

Instructions

  • 1. Combine first seven ingredients in a large bowl and mix gently to combine.
  • 2. Chill until ready to serve.
  • 3. To serve, put bean salad on a serving plate lined with lettuce. Garnish with mango, peach or apple slices.
  • 4. Serve with warmed corn tortillas and salsa.
