Texas Smoked Beef Tenderloin

Ingredients

6-7 lb Beef Tenderloin

1 cup Briggs TRUE Texas Seasoning & Rub

½ cup Mustard Sauce
Directions
Preheat your smoker or indirect grill to 225 degrees (or oven)
Truss and tie up the thin end of the tenderloin to make an even sized roast
Over a large tray with a drying rack Smear and rub the BT Texas Mustard Sauce all over the meat
Apply the Briggs TRUE Texas Seasoning & Rub all over the meat.
When you’ve created an even crust of seasoning let rest on the rack to come up room temperature.
Place the Tenderloin in the smoker at 225 degrees and use your favorite wood chips.
Briggs prefers Pecan, but has been known to use Oak and Hickory too.
Smoke about 2 ½ -3 hours, until the internal temperature reaches 135 degrees
Let rest for 15-20 minutes before cutting
Slice into ½-1 inch slices and serve with Mustard Sauce on the side
